Cooking a Turducken
Truly a Cajun Delicacy.
A turducken is a debonned chicken stuffed with your favorite stuffing, then stuffed inside a debonned duck,  the  the whole savory mix is inserted in a partially debonned turkey.
It yields approximately 16 pounds of food and feed approximately 18 - 22 people, or 12 - 15 cajuns.
Method I:
My favorite way is to place it in a 400 degree oven for about 45 minutes, (cooking time depends on oven) or until lightly golden then reduce heat to 350 degrees, COVER it tightly and continue to cook for about 3 1/2 - 4  additional hours. You want the internal temperature to reach 170 to 175 degrees. I like to sit it on a "roasting rack" in the baking/roasting pan so as to keep it from sitting in juices. I also like to place about 1/3 cup of liquid in the bottom of the pan before covering with foil.

Method II:
Place it COVERED in a 375 to 350 degree oven for about 4 1/2 hours, (cooking time depends on oven) then uncover it and continue to cook for about 45 additional minutes to get it golden brown. You want the internal temperature to reach 170 to 175 degrees.
